White Chicken Chili

Here is another recipe from my college roomie, Sarah. I tweaked the recipe a little bit and used leftover Thanksgiving turkey and homemade turkey broth, and it turned out just fine. The first time I made 1/2 a batch and that was just enough for our family to eat one meal. We all loved it, except for Jori, our in house food critic. She did not like the beans. Oh well.

White Chicken (or Turkey) Chili

1 lb chicken breast cut into 1/2 inch cubes (Or whatever turkey or chicken you have on hand!)
1 medium onion, chopped
1 1/2 tsp garlic powder (I used minced garlic)
1 Tbsp vegetable oil
1 can chicken broth
2 cans (15 oz each) Great Northern Beans
1 or 2 cans chopped green chilies
1 tsp salt
1 tsp ground cumin or coriander
1 tsp oregano
1/2 tsp pepper
1/4 tsp cayenne pepper (Sarah leaves this out, I added maybe 1/8 tsp)
1 cup sour cream
1/2 cup whipping cream

Saute onion, garlic, (and chicken if it needs to cook) in oil. Add beans, broth, chilies, and seasonings. Bring to a boil, reduce heat and simmer uncovered for 30 minutes. Stir in sour cream and whipping cream.

We served it with cheese and tortilla chips on top. YUM!
